  • Soy Sauce: Feel free to use low sodium soy sauce, coconut aminos or tamari instead if preferred.
  • Cornstarch: This is what makes the sauce have that thick and shiny quality to it.
  • Fresh Ginger: Try to only use fresh ginger for the very best flavor! In a pinch though, dried ground ginger will also work. You’ll need about 1/2 tsp.

Can I use chicken thighs instead?

Absolutely! I just recommend using boneless, skinless thighs so they’re easy to slice and cook just like breasts.

Ingredients

  • 2 chicken breast cooked and cubed
  • 1 tablespoon olive oil or sesame oil
  • ¼ cup soy sauce
  • ¼ cup water
  • 2 tablespoons packed brown sugar
  • 3 tablespoons honey
  • 1 tablespoon rice vinegar
  • ¼ teaspoon sesame oil
  • 3 cloves garlic minced
  • 3 teaspoon peeled & minced fresh ginger
  • 2 teaspoon cornstarch
  • sesame seeds and chopped green onions optional, for serving

Instructions

  • Add olive oil to a large skillet over medium high heat.

    1 tablespoon olive oil

  • Add chicken to the skillet and cook until fully warmed through, about 7-9 minutes.

  • In a small bowl, make the sauce: whisk together soy sauce, water, brown sugar, honey, vinegar, sesame oil, garlic, ginger, and cornstarch.

  • Pour sauce into the skillet with the cooked chicken, and stir to combine. Simmer for 2-3 minutes, until thickened.

  • Recommended: Serve over white rice, garnished with sesame seeds and green onions.

Notes

  • If you’d like to add some spice to your sauce, add a couple pinches of red pepper flakes.

Storage: Store chicken teriyaki in an airtight container in the refrigerator for 3 days, or freeze for 3 months.
