Variations:

  • Chocolate Chips – Feel free to use other types of chocolate chips. You can make this fudge with white chocolate chips, milk chocolate chips, or dark chocolate chips.
  • Natural Peanut Butters – This creamy fudge recipe is best made with regular peanut butter. Feel free to crunchy peanut butter if you prefer.

Step by Step Instructions:

  • Step 1 – First, you need a 9×13 glass pan to make the fudge. Go ahead and line with parchment paper or foil.

Step 2 – Place chocolate chips in a microwave safe bowl and melt. Start with 1 minute and stir until the chocolate is melted and smooth. Set this aside for later.

Step 3 – Now, pour the vanilla chips in a separate medium sized glass bowl. Again, microwave in 1 minute intervals until it is melted.

Step 4 – Then stir until it is smooth. Once it is melted and smooth, add the peanut butter and stir until the white chocolate and peanut is combined together well and really smooth.

Tiger Butter Fudge Recipe (6)

Step 5 – The last step is to pour into the prepared pan. Put all of that yummy vanilla-peanut butter mixture into the baking dish. Now, the fudge mixture won’t reach the edges of the pan and that is normal so do not worry.

Step 6 – After the mixture has settled into the pan, get the bowl of melted semi sweet chocolate. Pour this onto the vanilla-peanut butter mixture in lines back and forth.

Tiger Butter Fudge Recipe (8)

Step 7 – Now, you are going to give the chocolate peanut butter mixture pretty marbled look. Use a long sharp knife and run it the opposite direction of the chocolate lines you created. You want to make a swirl pattern.

  • Step 8 – After it has cooled and set, take the foil or parchment paper from the pan by pulling on it to remove the fudge. I like to sit it on a cutting board and cut into small squares. .

Recipe Tips:

  • Tiger’s Stripes – To make the strips just run your knife through the mixture. Swirl as much as you want so that you get a pattern that you like. This is really fun and my kids love to help. It’s just fun to see the swirl pattern start to form. I think it is easiest to do this using a knife that is long and sharp.
  • Cool Fudge – Allow the fudge to cool on the counter at room temperature so the fudge sets.
  • Cutting Fudge – If you lined your baking pan with parchment paper, you can easily remove the fudge from the pan. Place the fudge on a cutting board and then slice.

What is the Best Way to Melt Chocolate?

We recommend melting chocolate chips in the microwave. Simply place the semi sweet chocolate chips in a small glass bowl that is microwave safe.

Microwave in intervals to melt the chocolate. This is really important to do this in intervals so the chocolate does not burn or become too hard.

Sometimes chocolate can look like it is not melted when it really is. Make sure to stir it and don’t just assume that it needs more time.

How to Store:

Place the fudge inside an airtight container.

Can you Freeze Fudge?

Yes, you can freeze this fudge up to 1 month. I would suggest putting the fudge in between parchment paper so that it does not stick. Then place the fudge in the freezer.

It also make it easier if you want to just grab a piece for snacking and not take the entire container out.

What is Tiger butter fudge made of? ›

Tiger Butter is SO easy to make! First, assemble your ingredients. You'll need semi sweet chocolate chips, white chocolate chips and creamy peanut butter. I think chunky peanut butter would taste good in this recipe, but the swirls wouldn't look nearly as pretty, so I use creamy peanut butter.

Is it better to use salted or unsalted butter in fudge? ›

Use unsalted butter so you can add a small amount of salt (¼ teaspoon per stick of butter) to the sugar/liquid mixture. Salt tends to stabilize the mixture and keep it from foaming as much.

Why is my 3 ingredient fudge not setting? ›

Why won't my 3 ingredient fudge set? This often happens when the condensed milk and chocolate chip mixture isn't hot enough to start.

Should you stir fudge while it's cooking? ›

Don't stir!

Once the fudge reaches soft-ball stage on the candy thermometer, remove from the heat and let the temperature drop to 110°F. Keep that spoon or spatula out of the pot until this happens. If you stir too early in the process, you'll make the sugar crystals too big and end up with grainy fudge.

What is the secret to smooth fudge that is not gritty? ›

Once a seed crystal forms, it grows bigger and bigger as the fudge cools. A lot of big crystals in fudge makes it grainy. By letting the fudge cool without stirring, you avoid creating seed crystals.

What is in Mackinac Island fudge? ›

How long does fudge keep fresh? ›

Typically, homemade fudge lasts about 1 to 2 weeks at room temperature, 2 to 3 weeks in the fridge, and up to 3 months in the freezer when stored in an airtight container.

Why does butter separate when making fudge? ›

If the butter gets too hot, it can separate, causing the fudge to become oily on top. This is easy to prevent by monitoring the temperature with a candy thermometer, but separated fudge can also be fixed. To fix oily, hard or grainy fudge, scoop the fudge back into a pot with about a cup of water.

What happens if you use salted butter instead of unsalted butter? ›

If you're baking and swapping in salted butter, the excess water from salted butter may make more of an impact. This is because extra water can have an effect on how gluten reacts and forms within dough. Consider slightly lessening any additional water the recipe may call for.

Why do chefs use unsalted butter when making desserts? ›

Unsalted butter gives you complete control of the overall flavor of your recipe. This is especially important in certain baked goods where the pure, sweet cream flavor of butter is key (butter cookies or pound cakes). As it pertains to cooking, unsalted butter lets the real, natural flavor of your foods come through.

Can you reboil fudge that hasn't set? ›

How can you fix soft fudge? Put it in a microwave safe bowl that is large enough that it won't boil over. Reheat it to the boiling point and cook for about 3 more minutes. Then you can beat some powdered sugar into it if this doesn't make it set.

What can I do with failed fudge? ›

Options for what you can do with your unset fudge:

OPTION 1) Depending on how runny it is, you can either use it as a frosting for cakes, or a sauce for ice-cream. OPTION 2) Freeze it overnight. Cut it into squares. Cover each square thickly in melted chocolate, ensuring no part of the fudge is exposed.

What is the best temperature to cook fudge? ›

Confectionery experiments have shown that the ideal cooking temperature for fudge is around 114 to 115 °C (237 to 239 °F). The cooking is intended to evaporate a part of the liquid and concentrate the sugar.

How to make fudge more solid? ›

How do you fix fudge that is too soft? Bring the fudge back to a boil with 1–2 US tbsp (15–30 ml) of cream. If your fudge is soft or runny, it probably didn't come up to a high enough temperature while it was cooking. Put it back into the saucepan and add 1–2 US tbsp (15–30 ml) of 35% fat whipping cream.

Why hasn't my fudge set properly? ›

The main reason is that your Fudge has not reached the optimum temperature. If your mixture only reaches 110 or 112 degrees Celsius it will always be soft. That's why we recommend investing in a sugar thermometer. Another reason your Fudge is not setting is that the ratio of liquid to sugar is too high.

What does cream of tartar do in fudge? ›
